Beef Ramen a la’ Landrum Farmer's Market
This recipe incorporates classic Southern vegetable flavors into a comforting beef ramen dish.
Use whatever you have on hand!
Ingredients
- 1 lb beef skirt steak, pounded like it owes you money, and sliced thin
- 2 packs ramen noodles (discard seasoning packets)
- 1 tbsp olive oil
- 1/2 cup chopped purple onion
- 2 cloves garlic, minced
- 1/2 cup chopped carrots
- 1 cup chopped purple beans
- 1 cup okra
- 1 cup snow peas
- 1 cup mushrooms
- 2 cups beef broth
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce or white miso paste
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1/2 tsp ground ginger
- Salt and pepper to taste
- Soft boiled egg, sliced in half
- Green onions and sesame seeds for garnish (optional)
Instructions
- Caramelize the beef: Cook beef in hot olive oil until browned, then drain fat.
- Sauté vegetables: Add onion, carrots, and garlic to the skillet and sauté for about 5 minutes, or until softened.
- Add liquid and seasoning: Stir in beef broth, soy sauce, hoisin sauce, brown sugar, sesame oil, and ground ginger. Season with salt and pepper and bring to a simmer.
- Cook the ramen and other vegetables: Add ramen noodles, green beans, and peas to the skillet. Simmer until noodles are cooked and vegetables are tender
Serve and garnish: Serve hot, garnished with green onions, soft boiled egg, and sesame seeds if desired.
Notes
- Adjust soy sauce and brown sugar amounts to your preference.
- Any beef steak will do.
- Consider adding other Southern vegetables like collard greens, diced bell peppers, or creamed corn.
- For added heat, include red pepper flakes or hot sauce in step 3.
